RED CHAILLES
This is the top of our range, made exclusively from vines situated on limestone with flint nodules ('chailles'). This terroir gives the best -structured wines of our Estate: a 'cru' within the 'cru'. Made from the traditional quality grape varieties (Grenache, Syrah, Mourvèdre). Manual harvesting, a long period of fermentation, 24 months of maturing in vats and in oak. Dark coloured. A fruity nose that is deep, intense, and refined (blackcurrants, spices, preserved fruits). It is a very thick wine, with silky tannins and extremely aromatic. Its distinguished balance renders this a great wine with long cellaring potential.
Drink with: Red meat, roasted or in a sauce; game; strong cheeses.
To serve:Decant several hours ahead. Serve at 15°.
Keep for: 10-15 years.
